Easy, cheap curry that serves at least 6. You will have leftovers!

Ingredients
- 1 cup dried red lentils, rinsed
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 can (14oz) diced tomatoes
- 1 can pineapple chunks, drained
- 1 can coconut milk
- 2 cups vegetable broth
- cooked rice, for serving
Directions
- Heat oil in a large pot over medium heat.
- Add onion and garlic. Sauté about 5 minutes, until soft.
- Stir in curry powder and cook about 1 minute, until fragrant.
- Add all other ingredients. Stir well.
- Bring to a boil and then reduce to a simmer. Cover and cook for 25-30 minutes, stirring occasionally, until lentils are soft.
- Season with salt and pepper.
- Serve over rice.
